Juicy Lucy’s delicious Watermelon and Cashew salad, will take you straight to a Summer day, eating ‘al fresco’ as it is so fresh and light. The Asian twist of the Cashews Toasted in Five Spice seasoning and Sesame Oil, gives it a delightful depth. You can add a protein of your choice, such as Vegan Feta or Marinated Tofu. This salad can be served with Coriander and Mint, as I have done here, for that extra freshness, on a bed of Rocket, drizzled with sesame oil and tamari dressing and finished with a few black sesame seeds.
Fresh, simple and vibrant, this dish is always a favourite on my table.
This is an excellent side-dish or is perfectly filling enough to be the main event.
