Juicy Lucy’s Quinoa, Lentil and Asparagus Salad is the perfect side or you can add to it – here I have added Sun Dried Tomatoes to give it some extra colour. You could also add Sweetcorn, Chillie, Raw Carrot – anything you fancy really.
Fresh, simple and vibrant, this dish is always a favourite on my table; and super versatile.
This is an excellent side-dish or is perfectly filling enough to be the main event.
