This delicious vegan coleslaw is not only beautiful to look at, made with Red Cabbage, Carrots, Pumpkin Seeds, Sultanas, Pecans, with a Tamari, Sesame Oil and Orange Dressing, you can feel every bit of goodness inside it.

Fresh and zingy, bursting with flavour, it’s an excellent side-dish or is perfectly filling enough to be the main event.

The Asian twist of the Cashews Toasted in Five Spice seasoning and Sesame Oil, gives it a delightful depth. Served with Coriander and Mint, as I have done here, for that extra freshness, on a bed of Rocket, drizzled with sesame oil and tamari dressing and finished with a few black sesame seeds.
